| | sick | ] | I feel like crap. I just wanna go home. But, I guess it is my fault, I had a good weekend.
Including school, I worked for about 13 hours or so on Friday which wasn't too bad because I had some gaps and and work wasn't very crazy. Saturday was hectic, though, went to work at 10 and was so busy I could hardly stop to eat. At 4, I went home, took a shower, got dressed, and ran up to the event I was serving at. Again, was so busy I barely had time to sit down or take any breaks; it was running back and forth from the kitchen to the dining room for the most part. When I got home at about 9:15, I promptly set about putting together a meal for Cody (I didn't really have to make anything because I got fre food from the event). And then, I was finally done. Sunday, chilled for a little bit then went and took my driving lesson. After that, Evan called (bored of course) and wanted to hang out. So I wound up running around (literally) with cody and evan until 9:00.
So, I guess all of that was too much for me because I woke up feeling MISERABLE. Oh well, the weekend was worth it. |

| | calm | ] | So I'm entering that competition in Sebastopol, you know, the "Guys Can Cook" one? I'm going to enter with a dessert, I think. The competitors can make anything they wish and serve 500 1 oz. servings. The plating is going to be a bitch. However, I think I'm going to make a variation of this: VANILLA MOUSSE MERINGUES AND FRESH BERRIES
2 cups plain yogurt 1 cup sugar 2 cups heavy cream 1/2 teaspoon vanilla essence 3 egg whites Rind of 1 orange, finely julienned and blanched Meringues 1/2 cups mixed berried Strawberry Coulis Mint sprigs (for garnish)
1. Line a large colander with several layers of cheesecloth.
2. In a large bowl, mix the yogurt with the sugar.
3. In a separate bowl, beat the cream and the vanilla essence until stiff. Fold the cream into the yogurt. 4. In a large bowl, beat egg whites with an electric mixer until stiff but not dry. With a spatula, carefully fold in the yogurt mixture and the orange rind.
5. Transfer the mousse mixture to the prepared colander and place over a bowl. Cover with plastic wrap and place in the refrigerator to drain for at least 4 hours.
6. When ready to serve, place one meringue on each of the 10 dessert plates. Top with some mousse and a few berries. Top each with a second meringue.
7. Drizzle some strawberry coulis around each meringue and garnish with a few berries and a sprig of mint.
It should be easy to plate but beautiful and everything can be made ahead of time ready to assemble at the actual competition. Since we have to send a recipe and entry in by April 4, I'm going to need to make that 4th quarter dinner next week in order to test it out.
Karah, do you know anything about this? The details are kind of fuzzy on exactly how the competition is being conducted, what we serve on, what time is allotted, and so forth. Any info you have, not on that paper, would be great. |

Confused about my relationship with one of my best friends.
Woke up at 12:30am with such a horrible stomach ache it was all I could do not to vomit. I can't miss work, I'd feel even worse. Especially since I know it's probably more nerves than anything.
Still sick. Still need to go to work. Still confuzzled. Still lookin' at my spiffy new hat in the mirror every time I get a chance.

Yeah, I'm just posting while waiting for the gumbo to finish cooking. It should be good. Already made meringue baskets filled with whip cream and topped with chocolate and raspberries, this morning. yummmmmmm :P'''''<---(drool) They were good, but I'm going to make even better ones for the dessert party on March 24.
